Taken from "Ready When You Are"
Tryyyyy it, you'll liiiike it!
Broken down for 1 serving:
½ T olive oil
1/4 onion, thinly sliced
½ clove garlic, minced
1/4 pound tomatoes, peeled, seeded, chopped (I'm pretty sure I've used canned sometimes)
1 T tomato paste
Salt to taste
1-1/2 tsp parsley
Small piece of bay leaf
Pinch of paprika
Pinch of saffron
1/4 pound potato, peeled and sliced
1 egg
1-2 slices stale good bread
Saute onion til soft, add garlic and stir in. Add tomatoes, salt, parsley, bay, paprika and tomato paste. Cook about 10 minutes. Add 1 cup water or broth and potatoes. Bring to a boil, add salt to taste and saffron. Simmer til potatoes are tender. Add pepper. Poach egg in soup and serve over garlic-rubbed slices of bread.

I recently added an "Italian Word a Day" thingie which shows up at the bottom of every page. You see the word and can click to hear it pronounced. I've been enjoying it and I think my accent is improving as time goes by.

This recipe looks delicious and very healthy! I love adding eggs to dishes (I just added it to my spinach salad), and I really enjoy when the runny yolk spills out onto the rest of the food. Thanks for the recipe, I hope to try it in the next few days!
Wow, Ashley - what a treat getting a comment from you! I really have been enjoying your recipes and your writing, so thank you so much for your visit. Tonight I cheated - heated up a can of beef barley soup, dropped my egg in and served it over a half of one of those demi-baguettes. :) Not as good but super quick and I wanted a little extra protein.
